Eggplant and Kale with Rice
So, we had a whole bunch of kale and eggplant left over from a shoot, and decided to make a veggie-centered dish. Super easy, quick, and rich in vitamins. Serves 2 hungry people.
Ingredients:
-1 large bunch of kale
-1 medium sized eggplant
-2 cups rice
-aprox. 4 tbs olive oil
-salt and pepper to taste
-2 tbs vinaigrette

Tofu Pasta Bake w Parmesan Asparagus
Oh Tofu Pasta Bake, how I love you. Perfect for 4 people, or 2 and lots of leftovers for the next day. And way too easy.
Ingredients for Pasta Bake:
-approx 12-14 oz wheat pasta
-1/2 a block of tofu
-1 egg
-1/2 cup cheese (we used muenster)
-3/4 of a jar of tomato pasta sauce
-1 tbs olive oil
-a sprinkle of parmesan cheese
-salt & pepper to taste
