So, we had a whole bunch of kale and eggplant left over from a shoot, and decided to make a veggie-centered dish. Super easy, quick, and rich in vitamins. Serves 2 hungry people. Tofu Pasta Bake w Parmesan Asparagus
Oh Tofu Pasta Bake, how I love you. Perfect for 4 people, or 2 and lots of leftovers for the next day. And way too easy.
